    chicken curry

    1. 2/3 chicken fillets sliced
    2. 1 onion diced
    3. water
    4. yogurt to serve for little ones
    5. basic paste ingredients...
    6. *2 cloves garlic crushed
    7. *1 teaspoon turmeric
    8. *small piece of root ginger finely sliced
    9. *2 tablespoons groundnut oil
    10. *2 tablespoons tomato puree
    11. *2 teaspoons cumin seeds
    12. *1 teaspoon mustard seeds
    13. *1 teaspoon fenugreek seeds (we have made without and it's been fine)
    14. *1 teaspoon coriander seeds
    1. Toast the cumin, mustard, fenugreek and coriander seeds then grind in a pestle + mortar.
    2. Mix the spices with all of the other ingredients* and your basic paste is ready.
    3. Fry your chicken until sealed in a little oil then add onions and anything else you are adding.
    4. Add a little water to the paste to loosen it and add to pan.
    5. Simmer until chicken is cooked through.
    6. Serve!
    1. I also sometimes add cauliflower, chickpeas, lentils or other veg.
    2. For younger ones it may be better to bake their portion separately in the oven then shredding the chicken if you prefer.
    3. Add yogurt to little ones portion to remove the heat.
