    spiced quinoa

    Ingredients
    1. 200g quinoa
    2. 1 onion
    3. 2 gloves garlic
    4. handful frozen peas
    5. 1 teaspoon ground cumin
    6. 1 teaspoon mustard seeds
    7. 1/2 teaspoon ground turmeric
    8. oil
    9. 2/3 chicken breasts
    10. *for chicken...
    11. 2 teaspoons soy sauce
    12. a few drops worcester sauce
    13. 1/2 teaspoon turmeric
    Instructions
    1. Heat a little oil in a pot on a low heat and add the onions.
    2. When onions are soft add in the garlic and spices then stir.
    3. Rinse the quinoa then add to the pot and stir, then add in 450ml of boiling water. Cover and let it simmer for about 10 minutes.
    4. Meanwhile coat the chicken with the *ingredients and either bake or fry until cooked through.
    5. When the quinoa is cooked add in the peas and a little extra water if needed.
    6. Slice up the cooked chicken and serve with the quinoa, yum!
    Notes
    1. Personally I added a little salt to my portion but you may find it ok!
    2. The chicken is optional of course 🙂
