I really fancied pasta with a tomato sauce tonight with the chicken I had but all the recipes I found needed ingredients I didn’t have (typical). So as always I made my own, I honestly thought this was going to turn out a disaster but oh my it was amazing (if I do say so myself). The chilli flakes are optional of course as this is something the whole family can enjoy but it really wasn’t that spicy, just a little kick. I hope I have remembered everything I put in, first person to try it please feed back lol!

  1. 2 chicken fillets
  2. 200g roughly of pasta
  3. 400g tin chopped tomatoes
  4. 3-4 diced shallots
  5. 1 chicken stock cube
  6. 1 teaspoon tomato pesto
  7. 1 teaspoon balsamic vinegar
  8. 2-3 cloves crushes garlic (granules will do too)
  9. 1 teaspoon oregano
  10. 1/2 - 1 teaspoon chilli flakes (optional)
  11. black pepper
  12. spinach (small handful or 1-2 frozen cubes)
  1. You will need 2 pots and a pan, 1 for your pasta, 1 for the chicken and 1 for the sauce.
  2. Stick your pasta on to cook, meanwhile heat a little oil in the other pot and the frying pan.
  3. Put your chicken in the pan with some black pepper and the chilli flakes if you are using them and mix til evenly coated.
  4. Add the shallots to the other pot, once softened add in the chopped tomatoes.
  5. Add in the garlic, pesto, oregano, balsamic vinegar, a little black pepper, and the spinach to the pot.
  6. You can either stick the stock cube directly into the sauce or mix it with a little boiling water then add it.
  7. Once everything is cooked combine the chicken with the sauce, drain your pasta and serve!
